It’s strawberry season! The market and local farms are full of fresh berries! I always wind up bringing home more than I intended to, but the possibilities with these berries are endless, from jam to muffins to shortcake. When visiting my friend, Mary Anne, a few years back, we made these sweet handheld treats together and today I am sharing these delicious Strawberry Cheesecake Bites with you.
With just five ingredients, these Strawberry Cheesecake Bites are not only easy to make, but they are so delicious!

Ingredients:
To make Strawberry Cheesecake Bites, you need just 5 ingredients that you probably already have on hand, and the measurements couldn’t be easier. For each batch, you need:
- 1 pound of strawberries
- 1 8-ounce brick of cream cheese (regular or low-fat)
- 2/3 cup of confectioner’s sugar
- 1 teaspoon of vanilla extract or vanilla paste
- graham cracker crumb
You will also need a strawberry huller. This tool is easy to use, simple to clean, and costs just about $9. It is well worth it.
How to Make Strawberry Cheesecake Bites
1. First, set out the cream cheese to soften a bit.
2. Then while the cream cheese is softening, wash and hull the strawberries. This strawberry huller is seriously the best invention ever. It makes a time consuming job quick and easy.
3. Next, slice off the bottom of each strawberry so you can stand them up on a plate.
4. To prepare the filling, combine the cream cheese, sugar, and vanilla using a mixer medium speed for about 2 minutes. It should be smooth and creamy.
5. Put the filling in a plastic, quart-sized bag. Using kitchen shears, make a small cut to cut off one of the corners of the bag. Then pipe the filling into the strawberries.
6. Finally, sprinkle graham cracker crumbs on top to garnish.
How to Store Strawberry Cheesecake Bites
- Be sure to refrigerate these until serving.
- These should be made and enjoyed the same day.
Tips and Suggestions
- Set out the cream cheese to soften a bit.
