While I enjoy pumpkin and apple, one of my favorite flavors of the season is cranberry. So, I get a little excited when I start to see these beauties arriving at my local market. On a recent trip, a few bags made their way into my basket.

Since then, I have been enjoying them. Last week I had made these pretty DIY Holiday Jars and I set aside a bag for this Sparkling Cranberry Orange Sangria that I will be making for Thanksgiving. With the third bag, I decided to bake a little treat.

Filled with plump berries and fresh orange zest, these cranberry orange muffins are bursting with flavor! They are so easy to make and require ingredients you probably already have on hand. These muffins are a great way to start your day!

Cranberry Orange Muffin Ingredients

  • Flour – all purpose
  • Baking powder
  • Sugar – white granulated
  • Salt – this will enhance flavor
  • Orange juice – pulp or no pulp, it’s your choice!
  • Unsalted butter – melted
  • Egg – this provides structure
  • Grated orange rind
  • Cranberries – whole or chopped

How to Make Cranberry Orange Muffins

  1. Preheat oven to 400 degrees. Line your muffin tins with liners or use non-stick spray to grease.
  2. Sift the dry ingredients into a large mixing bowl.
  3. With a rubber spatula, fold in cranberries.
  4.  Mix in the remaining wet ingredients. The batter will be completely wet, but lumpy.
  5. Fill your muffin tin about 2/3 full. Sprinkle tops with sugar sprinkles.
  6. Bake at 400 degrees for 20 – 25 minutes, until golden brown and an inserted toothpick comes out clean.

Tips

  • Be mindful to not over-mix your muffin batter. If you use an electric mixer, only beat this batter for about 10 seconds.
  • Fill your muffin tin about 2/3 full.

  • 2 tsp grated orange rind
  • 1/3 cup butter melted
