Tomorrow we welcome fall! What better way to greet the new season than with this amazing Crockpot chili?
It is the perfect meal to throw in the Crockpot in the morning and enjoy later in the evening. This is the easiest and most delicious recipe for chili. The longer it cooks, the more the flavors blend together, and the better it is. 🙂
This chili is a family favorite during the week, when my Crockpot becomes a permanent fixture on the counter. On those crisp fall days, there is nothing like coming home to dinner done.
For this chili, you will need 2 pounds of ground beef. I like to use lean, organic grass-fed beef, but any ground beef will work just fine. You will also need 1/2 of a yellow onion, 1 can of dark red kidney beans, and 1 can of light red kidney beans, 1-15 ounce can of tomato sauce, 1-8 ounce can of tomato sauce, 1 cup of salsa, 1/2 teaspoon of garlic salt, along with 2 packets of mild chili seasoning. I have made my own chili seasoning in the past, but sometimes the packets are just easier. When I have measured it out, it was equivalent to about 4 tablespoons.
First, brown the ground beef and onion until cooked through. Drain any excess grease.
Pour the beef and onion mixture into your Crockpot. Then just add remaining ingredients. I don’t drain the kidney beans as the liquid is full of flavor.
Finally, let the Crockpot do the work. Cook on low for 6-8 hours.
I love this Crockpot from Hamilton Beach. With a built in timer, it shuts itself off and keeps food warm. I never have to worry about my recipes overcooking or burning. Best of all, it is less than $40.
Serve this flavorful chili with sour cream, cheddar cheese, and maybe some green onion.
Oh, and don’t forget the cornbread.
I hope you give this a try and let me know how you like it!
