Easy and Delicious Mexican Layer Dip

I have been making this layered party dip since I was a newly-wed, almost 27 years ago! I don’t remember where I got the recipe. It was before the internet, so it was probably in a magazine or from a friend.

Since then, this Mexican Layer Dip has become a favorite at get-togethers, to enjoy while watching a game or movie, and along side Taco Tuesdays. This delicious dip is so easy to put together and I am happy to share it with you today!

Mexican Layer Dip Ingredients:

  • refried beans
  • salsa
  • sour cream
  • shredded cheese (Monterey Jack, Cheddar)
  • sliced black olives
  • scallions
sliced olives, shredded cheese, scallions on cutting board with dip on the side

How to Make Mexican Layer Dip:

  1. Spread a can of refried beans on the bottom of a serving dish. I sometimes warm the beans for just 30 seconds in the microwave so they can easily spread.
  2. Next, add a layer of salsa. I usually use one small jar, or 1/2 of a large jar (about 2 cups)
  3. Then add a 16 ounce tub of sour cream on top of the salsa create a thick layer of creaminess.
  4. Top with shredded cheese, sliced black olives, and scallions.

Variations:

  • Add guacamole
  • Add seasoned ground turkey, ground beef, or chicken
  • Add shredded lettuce

What to Serve with Mexican Layer Dip:

  • tortilla chips
  • fresh veggies
  • use on soft tortillas to create roll up

Mexican Layer Dip

With layers of refried beans, salsa, sour cream, shredded cheese, sliced black olives, and green onion, this Mexican Layer Dip is an easy and delicious party food!

Ingredients
  

  • 1 16 ounce can refried beans
  • 1 1/2 – 2 cups salsa
  • 2 cups sour cream
  • shredded cheese Monterey Jack, Cheddar
  • 1 2.25 ounce can sliced black olives
  • scallions
