This Balsamic Caprese Salad with Cucumbers is the perfect summer salad. Full of vibrant cherry tomatoes, crispy cucumbers, fresh basil, and creamy bocconcini mozzarella, this salad can be prepared ahead and dressed with a flavorful vinaigrette before serving.

Summer is the time to enjoy all of the fresh fruits, vegetables, and herbs. Whether from your own garden, the local farm stand, or the market, fresh produce is always a highlight of summer.
My grandfather was a gardener and always grew the most delicious tomatoes. Plump and juicy, with a sweet taste, these delights taste like summer.
Today I am using sweet cherry tomatoes in an easy summer caprese salad that I have been making for years. It is light, refreshing, and full of flavor. I hope you enjoy it as much as my family and I do!

Balsamic Caprese Salad with Cucumbers
Caprese Salad Ingredients
- Cherry Tomatoes: I love the sweet flavor of these small, juicy tomatoes.
- English Cucumber: This long, thin cucumber with a thinner skin and fewer seeds brings a crisp, fresh taste to this salad.
- Sweet Basil: This aromatic herb adds a distinct flavor. Also, did you know that basil is full of antioxidants?
- Bocconcini Mozzarella: These delicate mozzarella balls or pearls have a creamy texture and a mild taste.
- Balsamic Vinaigrette Dressing: You can make your own, but with so many delicious options, store bought works well too. My favorite is Ken’s Steak House Lite Balsamic Vinaigrette Dressing.
- Sea Salt and Fresh Cracked Pepper: From the grinder, these course crystals and flakes season the salad with added flavor and texture.
How to Make Balsamic Caprese Salad with Cucumbers
- Wash and half the cherry tomatoes, and place in a bowl.
- Wash, slice and quarter the English cucumber. Add these to tomatoes.
- Cut fresh, clean basil into thin strips and add to salad.
- Drain and add the mozzarella pearls.
- Drizzle with balsamic vinaigrette dressing and top with salt and pepper.
- Gently toss and serve.
What to serve with Caprese Salad
This cherry tomato and mozzarella ball salad is a great side dish. It would be a great addition to grilled sweet Italian sausage, shrimp, chicken, or steak. It would also pair well with garlic or focaccia bread. You also might enjoy it with risotto or your favorite pasta dish.
You can also enjoy this caprese salad on top of a bed of your favorite greens.
How to Store Balsamic Caprese Salad with Cucumbers
Store this salad in an airtight container in the fridge for up to 2 days.
Tips
Do not dress the salad until you are ready to serve it. This salad can become watery. It is best served with a slotted spoon.
Keep salad chilled until serving.

Ingredients
- 4 cups cherry tomatoes sliced in half
- 1/2 English cucumber sliced and quartered
- 6 basil leaves torn or cut into thin strips
- 8 ounces bocconcini mozzarella pearls drained
- 1/4 cup balsamic vinaigrette salad dressing
- sea salt to taste
- cracked pepper to taste
Instructions

- Wash, slice and quarter the English cucumber. Add these to tomatoes.
- Cut fresh, clean basil into thin strips and add to salad.
