The Best Mediterranean Couscous Salad

Mediterranean Couscous Salad is a flavorful side dish that you are going to want to enjoy all summer long. This make-ahead salad is perfect for summertime gatherings.

Today I am excited to share one of my family’s favorite summertime salads. This Mediterranean Couscous Salad is light, easy to make, and full of flavor.

Since this Mediterranean couscous salad is not a mayonnaise-based salad, it is perfect to bring to your summertime gatherings. It’s always a hit at picnics and potlucks!

This couscous salad will feed about 10-12 people, so it is perfect for summer entertaining. Any leftovers will stay well and can be enjoyed for a few days.

Mediterranean Couscous Salad Ingredients

Near East Roasted Garlic and Olive Oil Couscous – This delicate couscous is wonderfully flavored and cooks up in just five minutes.

Olive oil – You will need a small amount to make the couscous.

Cucumber, chopped – You may remove the seeds, if desired.

Cherry tomatoes, halved

Yellow bell pepper, diced – These juicy peppers have a sweet flavor.

Kalamata olives, sliced – These olives are full of antioxidants and add a salty Mediterranean flavor to this salad.

Feta cheese, crumbled – This soft, crumbly, flavorful cheese is perfect for salads.

Greek salad dressing – use oil-based Greek salad dressing, not creamy dressing. This dressing is my family’s favorite.

How to make Mediterranean Couscous Salad

  • Prepare couscous according to package.
  • Transfer couscous to a large bowl and fluff with a fork. Let the couscous cool completely.
  • While couscous is cooling, wash and chop the cucumber, bell pepper, and half the tomatoes.
  • Drain the olives.
  • Add cucumber, tomatoes, peppers, olives, and feta cheese to cooled couscous.
  • Toss with dressing.

How to Store Mediterranean Couscous Salad

This salad can be stored refrigerated in an airtight container for up to 5 days. If it becomes dry, you may add a little Greek dressing to it before enjoying the leftovers.

Tips

  • Fluff the couscous with a fork to prevent it from lumping together.
  • Be sure to allow the couscous to cool before adding ingredients.

Addition of red onion will complement the flavors of this Mediterranean salad.

Ingredients
  

  • 3 boxes Near East Roasted Garlic and Olive Oil Couscous
  • 6 tbsp olive oil
  • 1 3/4 cups water
  • 1 large cucumber, chopped You may remove seed if you wish.
  • 1 pint cherry tomatoes, halved
  • 1 sweet yellow pepper, diced
  • 1/3 cup sliced Kalamata Greek olives, drained
  • 4 ounces feta cheese crumbles
  • 8 ounces Greek salad dressing Oil-based Greek salad dressing, not creamy dressing

Instructions
 

  • Prepare couscous according to package, using olive oil and water.
  • Transfer couscous to a large bowl and fluff with a fork. Let the couscous cool completely.
  • While couscous is cooling, wash and chop the cucumber, yellow pepper, and half the tomatoes. Drain the olives.
  • In a large serving bowl, toss cooled couscous with cucumber, cherry tomatoes, pepper, Kalamata olives, feta, and dressing.

Notes
