Savory Homemade Minestrone Soup

Delicious, hardy, and easy to make, this savory homemade Minestrone soup is the perfect meal for a chilly day! Loaded with veggies and packed with protein, this flavorful soup will quickly become a favorite!

It is officially soup season here in Connecticut and one of my family’s favorites is this savory homemade Minestrone Soup. On the stovetop, it comes together in just a little over 30 minutes.

This flavorful Minestrone Soup is exactly what you need to warm up on a cold day. Serve it with crusty bread and a crisp salad to make a complete meal.

Minestrone Soup Ingredients

  • water
  • canned tomatoes
  • tomato sauce
  • 1 small onion
  • carrots
  • beef bouillon cubes
  • minced garlic
  • Italian seasoning
  • pepper
  • Parmesan rind (optional)
  • Cannellini beans (white kidney beans)
  • kidney beans
  • Lima beans
  • green beans
  • fresh zucchini
  • dried linguine or ditalini pasta
  • grated Parmesan for serving

How to Make Homemade Minestrone Soup

Begin by combining water, tomatoes, tomato sauce, onion, carrot, beef bouillon, Italian seasoning, garlic, and pepper in a stockpot or Dutch oven. If you are adding a Parmesan rind, you can add it now.

Bring this mixture to a boil.  Then reduce heat and simmer, covered.

The aroma of this flavorful soup will begin to fill your kitchen.

It’s going to be delicious.

After about 10 minutes, go ahead and stir in the rinsed, canned beans, along with the frozen lima beans green beans, cubed zucchini, and pasta. Return to boil.

Now, reduce the heat and just sit back for the next 15 minutes while your soup simmers, uncovered.

Sprinkle shredded Parmesan cheese on top of your warm homemade Minestrone Soup and enjoy!

Is Minestrone Soup Gluten Free?

This soup is very versatile. To make it gluten-free, be sure to use beef bouillon cubes that are free of gluten.

You can omit the pasta, or use a gluten-free version linguini or ditalini pasta.

Ingredients
  

  • 6 cups water
  • 1 28 ounce can of diced tomatoes (or 2 14.5 oz.)
  • 1 8-ounce can of tomato sauce
  • 1 small onion diced
  • 1 – 1 1/2 carrots peeled and sliced
  • 4 tbsp beef bouillon granules
  • 1 tbsp Italian seasoning
  • 1 tsp minced garlic
  • 1/4 tsp black pepper
  • 1 small Parmesan rind optional
  • 1 can of Cannellini (Great Northern) beans drained and rinsed
  • 1 can of red kidney beans drained and rinsed
  • 1 cup frozen lima beans
  • 1 cup frozen cut green beans
  • 1 1 small zucchini cubed
  • 4 ounces dried linguine or ditalini pasta
  • grated Parmesan cheese for serving

Instructions
 

  • Begin by combining water, tomatoes, tomato sauce, onion, carrot, beef bouillon, Italian seasoning, garlic, and pepper in a stockpot or Dutch oven. Bring this mixture to a boil. Then reduce heat and simmer, covered.
