Savory Homemade Minestrone Soup

Delicious, hardy, and easy to make, this savory homemade Minestrone soup is the perfect meal for a chilly day! Loaded with veggies and packed with protein, this flavorful soup will quickly become a favorite!

Ingredients
  

  • 6 cups water
  • 1 28 ounce can of diced tomatoes (or 2 14.5 oz.)
  • 1 8-ounce can of tomato sauce
  • 1 small onion diced
  • 1 - 1 1/2 carrots peeled and sliced
  • 4 tbsp beef bouillon granules
  • 1 tbsp Italian seasoning
  • 1 tsp minced garlic
  • 1/4 tsp black pepper
  • 1 small Parmesan rind optional
  • 1 can of Cannellini (Great Northern) beans drained and rinsed
  • 1 can of red kidney beans drained and rinsed
  • 1 cup frozen lima beans
  • 1 cup frozen cut green beans
  • 1 1 small zucchini cubed
  • 4 ounces dried linguine or ditalini pasta
  • grated Parmesan cheese for serving

Instructions
 

  • Begin by combining water, tomatoes, tomato sauce, onion, carrot, beef bouillon, Italian seasoning, garlic, and pepper in a stockpot or Dutch oven. Bring this mixture to a boil. Then reduce heat and simmer, covered.
  • After about 10 minutes, go ahead and stir in the rinsed, canned beans, along with the frozen Lima beans green beans, cubed zucchini, and pasta.
  • .  Return to boil.
  • Reduce heat and simmer, uncovered, for 15 minutes.
  • Sprinkle shredded Parmesan cheese on top of your warm homemade Minestrone Soup and enjoy!
