Savory Homemade Minestrone Soup
Delicious, hardy, and easy to make, this savory homemade Minestrone soup is the perfect meal for a chilly day! Loaded with veggies and packed with protein, this flavorful soup will quickly become a favorite!

- 6 cups water
- 1 28 ounce can of diced tomatoes (or 2 14.5 oz.)
- 1 8-ounce can of tomato sauce
- 1 small onion diced
- 1 - 1 1/2 carrots peeled and sliced
- 4 tbsp beef bouillon granules
- 1 tbsp Italian seasoning
- 1 tsp minced garlic
- 1/4 tsp black pepper
- 1 small Parmesan rind optional
- 1 can of Cannellini (Great Northern) beans drained and rinsed
- 1 can of red kidney beans drained and rinsed
- 1 cup frozen lima beans
- 1 cup frozen cut green beans
- 1 1 small zucchini cubed
- 4 ounces dried linguine or ditalini pasta
- grated Parmesan cheese for serving
Begin by combining water, tomatoes, tomato sauce, onion, carrot, beef bouillon, Italian seasoning, garlic, and pepper in a stockpot or Dutch oven. Bring this mixture to a boil. Then reduce heat and simmer, covered.
After about 10 minutes, go ahead and stir in the rinsed, canned beans, along with the frozen Lima beans green beans, cubed zucchini, and pasta.
. Return to boil.
Reduce heat and simmer, uncovered, for 15 minutes.
Sprinkle shredded Parmesan cheese on top of your warm homemade Minestrone Soup and enjoy!
