Strawberry Cheesecake Bites
Strawberry Cheesecake Bites are delicious, bite-sized summertime treats. This dessert is simple to make and perfect for entertaining.

- 1 pound strawberries
- 1 8-ounce brick of cream cheese (regular or low-fat)
- 2/3 cup confectioner's sugar
- 1 tsp vanilla extract or vanilla paste

First, set out the cream cheese to soften a bit.
While the cream cheese is softening, wash and hull the strawberries. This strawberry huller is seriously the best invention ever. It makes a time consuming job quick and easy. Next, slice off the bottom of each strawberry so you can stand them up on a plate.
To prepare the filling, combine the cream cheese, sugar, and vanilla using a mixer medium speed for about 2 minutes. It should be smooth and creamy.
Put the filling in a plastic, quart-sized bag. Using kitchen shears, make a small cut to cut off one of the corners of the bag. Then pipe the filling into the strawberries.
Finally, sprinkle graham cracker crumbs on top to garnish.
