Strawberry Cheesecake Bites

Strawberry Cheesecake Bites are delicious, bite-sized summertime treats. This dessert is simple to make and perfect for entertaining.

Equipment

  • strawberry huller

Ingredients
  

  • 1 pound strawberries
  • 1 8-ounce brick of cream cheese (regular or low-fat)
  • 2/3 cup confectioner's sugar
  • 1 tsp vanilla extract or vanilla paste
  • graham cracker crumbs

Instructions
 

  • First, set out the cream cheese to soften a bit.
  • While the cream cheese is softening, wash and hull the strawberries. This strawberry huller is seriously the best invention ever. It makes a time consuming job quick and easy.
  • Next, slice off the bottom of each strawberry so you can stand them up on a plate.
  • To prepare the filling, combine the cream cheese, sugar, and vanilla using a mixer medium speed for about 2 minutes. It should be smooth and creamy.
  • Put the filling in a plastic, quart-sized bag. Using kitchen shears, make a small cut to cut off one of the corners of the bag. Then pipe the filling into the strawberries.
  • Finally, sprinkle graham cracker crumbs on top to garnish.

Notes

Tips and Suggestions:
    • Be sure to refrigerate until serving.
    • These should be made and enjoyed the same day.
    • Experiment with a variety of toppings. Instead of graham cracker crumbs, you may enjoy mini chocolate chips or chocolate shavings, cookie crumbs, chocolate sprinkles, chopped nuts.
    • For a gluten-free version, omit the graham cracker crumbs.
