Balsamic Caprese Salad with Cucumbers

Full of vibrant cherry tomatoes, cucumbers, fresh basil, and mozzarella pearls, this easy Balsamic Caprese Salad with Cucumbers is the perfect summer salad.

Ingredients
  

  • 4 cups cherry tomatoes sliced in half
  • 1/2 English cucumber sliced and quartered
  • 6 basil leaves torn or cut into thin strips
  • 8 ounces bocconcini mozzarella pearls drained
  • 1/4 cup balsamic vinaigrette salad dressing
  • sea salt to taste
  • cracked pepper to taste

Instructions
 

  • Wash and half the cherry tomatoes, and place in a medium-sized bowl.
  • Wash, slice and quarter the English cucumber. Add these to tomatoes.
  • Cut fresh, clean basil into thin strips and add to salad.
  • Drain and add the mozzarella pearls.
  • Drizzle with balsamic vinaigrette dressing and top with salt and pepper. Gently toss and serve.

Notes

Do not dress the salad until you are ready to serve it. This salad can become watery. It is best served with a slotted spoon.
Store this salad in an airtight container in the fridge for up to 2 days.
