2 cups all purpose flour 3 tsp baking powder 1 cup granulated sugar 1/2 tsp salt 3/4 cup orange juice 2 tsp grated orange rind 1/3 cup butter melted 1 egg 1 cup fresh cranberries chopped or whole
Preheat oven to 400 degrees. Line your muffin tins with liners or use non-stick spray to grease. Sift the dry ingredients into a large mixing bowl .With a rubber spatula , fold in cranberries. Mix in the remaining wet ingredients. The batter will be completely wet, but lumpy.
Fill your muffin tin about 2/3 full. Sprinkle tops with sugar sprinkles . Bake at 400 degrees for 20 – 25 minutes, until golden brown and an inserted toothpick comes out clean.
Be mindful to not over-mix your muffin batter. If you use an electric mixer, only beat this batter for about 10 seconds.
Fill your muffin tin about 2/3 full.
