Cranberry Orange Muffins

Equipment

  • 1 muffin tin

Ingredients
  

  • 2 cups all purpose flour
  • 3 tsp baking powder
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 3/4 cup orange juice
  • 2 tsp grated orange rind
  • 1/3 cup butter melted
  • 1 egg
  • 1 cup fresh cranberries chopped or whole

Instructions
 

  • Preheat oven to 400 degrees. Line your muffin tins with liners or use non-stick spray to grease.
  • Sift the dry ingredients into a large mixing bowl.With a rubber spatula, fold in cranberries. 
  • Mix in the remaining wet ingredients. The batter will be completely wet, but lumpy.
  • Fill your muffin tin about 2/3 full. Sprinkle tops with sugar sprinkles.
  • Bake at 400 degrees for 20 – 25 minutes, until golden brown and an inserted toothpick comes out clean.

Notes

  • Be mindful to not over-mix your muffin batter. If you use an electric mixer, only beat this batter for about 10 seconds.
  • Fill your muffin tin about 2/3 full.
