Now that we are all back to school, I am finding that I need to plan delicious, healthy and easy dinners for our busy evenings.
There is inspiration everywhere…from Pinterest to recipe books to blogs. However, for recipe inspiration, I can go to my mother-in-law.
My mother-in-law is a pretty amazing woman. Not only is she a dedicated mother to my husband and his sister, and an involved grandmother to my children, but she is also a great cook.
When raising my husband and his sister, this amazing lady worked full-time outside of the house. Even after retiring, she has found herself a second career and continues to work full-time. As a result, she knows something about making quick, tasty meals while juggling the demands of a busy life.
I am fortunate that she has shared some of her recipes with me. This is one of them…flavorful, easy, and with little clean-up needed.
Tried and true, this 30 minute one-pot meal is one of my family’s favorites. Paired with a salad, it is a quick, satisfying dinner for those busy nights.
To make this dish, you need just a few ingredients that you probably already have on hand. You will need 2 peppers, a small onion, 1 pound of ground beef, 1 8-ounce can of tomato sauce, 2 cups of white rice, 3/4 teaspoon garlic salt, and 3/4 teaspoon onion salt.
First, peel and chop the onion, and then chop the peppers. Saute’e these vegetables over medium heat in a large pan for about five minutes.
Next, add the ground beef and cook thoroughly. Drain any excess grease.
To the beef and vegetables, add one 8-ounce can of tomato sauce, one cup of water, and 2 cups of rice.
Season with the garlic salt and onion salt.
Lastly, reduce the heat to low and cover the pan until the rice is cooked…about five minutes.
If you’d like, you can add with salt, pepper, or even some Parmesan cheese. I like mine plain. 🙂
