Hello friends! I am sorry that I have been MIA for a bit. Balancing family, work, and home can sometimes be a challenge. Therefore, sometimes I just need to give myself the time to just take a step back and take a breath.
It is during these times that I need to get myself organized and back on track. One way is to be sure that I have our meals planned…meals that are both easy and healthy. I want to share one of these meals with you today. It an easy, delicious slow cooker dinner that can be put together quickly and enjoyed at the end of the day. I am talking about Crockpot sausage and peppers. This recipe is perfect served as grinders, over pasta, over spaghetti squash or even on its own!
For this recipe, you need 1 large or 2 small onions, 2 green peppers, a jar of marinara sauce, 2 packages of sausage (I like to use mild chicken), and a little sugar.
Brown the sausage in a pan on the stove top.
While it browns, slice onion and place in the bottom of your slow cooker.
Place the browned sausage in the slow cooker and top with a jar of Marinara sauce.
Sprinkle with a little sugar. I usually use about 1/2 to 3/4 teaspoon of sugar to neutralize some of the acidity of the sauce.
Slice green pepper and place on top of sausage. I like to place the peppers on top so they don’t get too soft.
Set the slow cooker on low for 8 hours.
That’s it…
The flavorful aroma will begin to fill your home.
My family enjoys this recipe as grinders.
We like to fill fresh baked rolls with the sausage and peppers, then top with cheese
Mozzarella or Parmesan…
Under the broiler…

- 2 packages of mild Italian chicken sausage

- Pour jar of sauce over the onions and sausage.
- Sprinkle with sugar and top with pepper slices.
- Cook on low for 8 hours.
- Serve this recipe as a grinder, over pasta, with spaghetti squash, or on its own.
