Savory Minestrone Soup

This savory soup comes together in just a little more than 30 minutes.

Serves: 8 servings
Ingredients
  • 6 cups of water
  • 1-28 ounce can of diced tomatoes
  • 1-8 ounce can of tomato sauce
  • 4 teaspoons of beef boullon
  • 1 tablespoon Italian seasoning
  • 2 cloves or 1 teaspoon of minced garlic
  • ¼ teaspoon black pepper
  • 1 can of Cannellini beans
  • 1 onion (peeled and diced)
  • 1 carrot (peeled and sliced)
  • 1 stalk of celery, chopped
  • 1 cup of cabbage (chopped)
  • 1 small zucchini (halved and sliced)
  • 1-10 ounce package of frozen Lima beans
  • About 4 ounces of dried linguine
Instructions
  1. Combine water, tomatoes, tomato sauce, onion, carrot, celery, cabbage, beef bouillon, Italian seasoning, garlic, and black pepper in a stockpot or Dutch oven
  2. Bring this mixture to a boil
  3. Reduce heat and simmer, covered, for about 10 minutes
  4. Stir in cannellini beans, undrained
  5. Then add Lima beans and zucchini
  6. Break pasta and add to soup
  7. Simmer, uncovered, for about 15 minutes
  8. Enjoy!
