This Garden Vegetable soup is one of my go-to meals. All natural, gluten-free, full of veggies and flavor, this soup will keep you warm and satisfied on a cold, winter's day.

Serves: 8 servings
  • non-stick spray
  • 1 small or ½ large onion peeled
  • 2 cups carrots, peeled and sliced
  • 6 teaspoons vegetable bouillon
  • 6 cups water
  • 1 teaspoon Italian seasoning
  • 1 10-12 ounce package of frozen green beans
  • 1 yellow squash, diced
  • 1 zucchini squash, diced
  • ½ small head of cabbages, sliced thin/shredded
  1. Begin by spraying a stock pot with non-stick spray.
  2. To this pot, add ½ bag of baby carrots, sliced, an chopped onion, and 1 clove of garlic, diced.
  3. Saute for about five minutes.
  4. Add 6 teaspoons of vegetable bouillon, 1 teaspoon of Italian seasoning, and 6 cups of water to create a broth.
  5. Bring this to a boil and simmer for about 10 minutes.
  6. Lastly, add in your vegetables: cut green beans, cubed yellow squash and zucchini, as well as shredded cabbage.
  7. Simmer for about five more minutes.
  8. Serve hot.
