A Christmas Vacation's Eggnog

Creamy and smooth, this amazingly good eggnog is a holiday favorite.
Recipe type: beverage/dessert
  • 8 cups of whole milk
  • 5 whole cloves
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 12 egg yolks
  • 1½ cups of sugar
  • 2 cups of rum (optional)
  • 4 cups light cream
  • 2 teaspoons vanilla
  • ½ teaspoon ground nutmeg
  1. In a saucepan, combine milk, 5 whole cloves, ½ teaspoon vanilla, and 1 teaspoon ground cinnamon.
  2. Heat this mixture on a low setting to slowly bring it to a boil.
  3. Meanwhile, in a large mixing bowl, combine 12 egg yolks with 1½ cups of sugar.
  4. I whisk the egg yolks first and then add the sugar.
  5. Continue whisking until this mixture is fluffy.
  6. Slowly whisk the hot milk mixture into the egg mixture.
  7. Then pour the entire mixture into the pan and cook over a medium heat for three minutes, stirring constantly.  The mixture should thicken.  You could use a double boiler, if you have one.
  8. Pour this mixture into a bowl, straining out the cloves.  Let it cool for an hour.
  9. Once cool, add rum, if desired, along with 4 cups of light cream, 2 teaspoons vanilla, and ½ teaspoon of ground nutmeg.
  10. Refrigerate overnight.
