Greek Couscous Salad

This light, colorful couscous salad has a delicate balance of flavors that pairs well with grilled shrimp, chicken, or steak.

Serves: approximately 12
  • 3 boxes of Neareast Roasted Garlic and Olive Oil Couscous
  • 1 cucumber, peeled and chopped
  • 1 pepper, chopped
  • 1 container grape tomatoes, halved
  • ⅓ cup sliced Kalamata olives, drained
  • 1 container crumbled feta
  • fresh parsley, chopped
  • ½ bottle of Greek salad dressing
  1. Begin by preparing the couscous according to package directions. This couscous cooks up in just five minutes. Set aside to cool.
  2. While the couscous is cooling, peel and chop cucumber. Chop pepper and slice the grape tomatoes.
  3. Drain olives
  4. When couscous is cooled, put it into a large bowl and fluff with fork.
  5. Add vegetables, olives, feta cheese, and parsley. Gently mix. Toss with Greek salad dressing.
  6. You can make this salad ahead. Chill salad until it is served and enjoy!
