Tomorrow we welcome fall! What better way to greet the new season than with this amazing Crockpot chili?!

This chili is a family favorite during the week, when my Crockpot becomes a permanent fixture on the counter. On those crisp fall days, there is nothing like coming home to dinner done.

This simple chili is the perfect meal to throw in the Crockpot in the morning and enjoy later in the evening. This is the easiest and most delicious recipe for chili. The longer it cooks, the more the flavors blend together, and the better it is.  🙂

Crockpot Chili Recipe Ingredients

For this chili, you will need

  • Ground Beef: I like to use lean, organic grass-fed beef, but any ground beef will work just fine.
  •  Yellow onion, diced
  • Dark red kidney beans, drained and rinsed
  • Light red kidney beans, drained and rinsed
  • Tomato sauce – canned
  • Salsa – Your choice of mild, medium, or hot, fresh or jarred.
  • Garlic salt
  • Mild chili seasoning. I sometimes make my own chili seasoning, but when I am short on time, the packets work well too.

How to Make Crockpot Chili

  1. Brown the ground beef and onion until cooked through. Drain any excess grease.
  2. Pour the beef and onion mixture into your Crockpot.  
  3. Then just add remaining ingredients.
  4. Now, let the Crockpot do the work. Cook on low for 6-8 hours.
  5. 30 minutes before you serve, take the lid off of the crockpot to allow the chili to thicken up.

Serving Suggestions

Serve this homemade crockpot chili with cornbread or corn muffins.

  • A dollop of sour cream
  • Shredded Cheddar or Cheddar Jack cheese
  • Avocado slices
  • Sliced scallions
  • Diced tomatoes
  • Corn chips
  • Homemade Guacamole
  • Fresh cilantro

Can you make this chili on the stovetop?

Yes, you can! Make this chili in an aluminum or stainless steel pot on your stovetop. Brown the ground beef and onion in your pot until cooked through. Drain any excess grease.
Then just add remaining ingredients. Bring the mixture to a boil, stirring consistently to be sure it does not burn. Then cover, reduce heat to low, and simmer on low for 1 hour, stirring occasionally. For the last 20-30 minutes, simmer uncovered. This will help to reduce the liquid and encourage the chili to thicken.

Ingredients
  

  • 2 pounds ground beef
  • 1/2 yellow onion
  • 1 15.5 oz can dark red kidney beans
  • 1 15.5 oz can light red kidney beans
  • 1 15 oz can of tomato sauce
  • 1 8 oz can of tomato sauce
  • 1 cup salsa
  • 4 tbsp chili seasoning (2 packets)
  • 1/2 tsp garlic salt

Instructions
 

  • Brown the ground beef and onion until cooked through. Drain any excess grease.
  • Pour the beef and onion mixture into your Crockpot.
  • Then just add remaining ingredients.
  • Cook on low for 6-8 hours. 30 minutes before you serve, take the lid off of the crockpot to allow the chili to thicken up.
